Jernmangelanemi: Jernopptaket
Opptaket av jern foregår i øvre del av tynntarmen (jejunum). Bare fem til ti prosent av det jernet som er i kosten hos normale og friske personer, blir tatt opp i tarmen. Ved økt jerninnhold i kosten nedsettes opptaket dersom du er i god jernbalanse. Motsatt, dersom du har jernmangel, kan opptaket økes tre til fem ganger.
Jern i kosten er tilgjengelig i to former: Heme-jern, som finnes i kjøtt, og ikke-heme-jern som finnes i planter og melkeprodukter. Ikke-heme-jern utgjør hovedtyngden av det jernet som blir tatt opp i tarmen. Opptaket av ikke-heme-jern krever syre i magesekken og varierer med føde som stimulerer opptaket (askorbinsyre, kjøtt) eller hemmer (kalsium, fiber, te, kaffe, vin).
